COCONUT CUSHIONS WITH HAZELNUTS
Dessert served with coffee or tea that just melts in your mouth.
Ingredients
- 150 g of coconut flour
- 50 g of millet flour
- 150 g of ground hazelnuts
- 250 g of agave syrup (or honey)
- 50 g of molasses
- 1 banana (very ripe)
- 1 teaspoon of ground cinnamon
- 200 g of coconut oil (melted)
- 50 g of hazelnut butter (or peanut butter)
- A pinch of salt
Instructions
- Mix the wet ingredients in a blender until they are well combined. These are: melted coconut oil, hazelnut butter, banana, agave syrup and molasses.
- Then add all the remaining dry ingredients to the wet ingredients (in a blender) and mix again, into a homogeneous mixture.
- Preheat oven to: 200 degrees celsius
- Cover the baking tray with baking paper. Use a spoon to form dough in a desired shape (“cushions”).
- Bake (on ventilation) for 15 minutes – 200 degrees celsius
Notes
The dough will cover 2 trays.
Cushions will still be tender after baking, so leave them on the rack to cool.
Keep them chilled in a sealed container. The pads will be very tasty even without Molasses, but it adds a special note of flavour.
