SPRING ROLLS

Rice rolls are a light meal, suitable for brunch, lunch or a great meal for hanging out with friends.

Ingredients
  

  • 8 rice paper wrappers
  • 2 layers or a handful of rice noodles
  • 1 packet of tofu

PEANUT SAUCE

  • 1 tablespoon of sesame oil
  • 2 tablespoons of soy sauce
  • 2 tablespoons of agave syrup
  • 1/2 cup of peanut butter
  • 2 tablespoons of rice vinegar
  • A pinch of smoked ground paprika
  • Rice milk (to dilute if the sauce is too thick)

PARSLEY SAUCE

  • 4 tablespoons of sunflower seeds
  • 1 clove of garlic
  • 3 tablespoons of fresh parsley
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of yeast flakes
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sesame oil
  • 1/2 teaspoon of mustard
  • salt and paper (add to taste)

INGREDIENTS FOR ROLLS

  • 1 zucchini (cut into noodles)
  • 1 1 carrot
  • 4 lettuce leaves
  • 4 radish leaves
  • fresh sprouts
  • 2 handfuls of young spinach
  • marinated tofu

TOFU MARINADE

  • 2 tablespoons of soy sauce
  • 1/4 teaspoon of ground curry
  • 1/4 teaspoon of smoked ground paprika
  • 1/4 teaspoon of ground garlic

Instructions
 

  • First prepare the marinade for the tofu.
    Soak up the tofu with a paper towel, cut it lengthwise to 5x5mm.
    Marinate sliced tofu. Set aside.
    In the meantime, prepare the sauces,
    Blend each sauce separately. Add salt and pepper to taste. If it is too thick, add a little vegetable milk. Blend again.
    Cut the zucchini and carrots with a peeler into noodles - spaghetti-sized.
    Cook the rice noodles according to the manufacturer's instructions. When they are cooked, take a big bowl of warm water to prepare rice paper wrappers.
    Marinated tofu quickly fry in a pan on 1 tablespoon of coconut oil.
    When fried, soak up the moisture with a paper towel.

Composition of dishes

  • Soak rice papers in warm water for a few seconds. Place rice paper on a board. First put a lettuce or a radish leaf, then top it with cooked rice noodles, carrots, young spinach, zucchini, sprouts and finally tofu. Turn carefully. 

Notes

Soak sunflower seeds in warm water for at least 1 hour. Rinse and then they are ready for blending.
When assembling the rolls, do not overdo the filling, as it will then be difficult to wrap. First fold up the sides so it holds the ingredients together and then carefully wrap it up. The soaked rice papers stick together nicely.
